Through years of visiting his favorite kitchens, wandering the French Quarter, and sharing tables with local chefs, Chef Jasper brought home original recipes and time honored techniques rooted in tradition, hospitality, and a little bit of mystery. This dinner is his tribute to the city that continues to shape his cooking and his spirit.
Guests will gather for a communal dining experience that captures the heart of New Orleans, where dishes are meant to be shared, stories linger long after the plates are cleared, and every bite carries a sense of history and celebration.

The Big Night, starring Stanley Tucci. This iconic dish is more than pasta. It is tradition, family, celebration, and pure Italian drama baked into one unforgettable moment.
Chef Jasper will walk you through the history and soul of the famous timpano pasta, sharing stories, technique, and secrets that make this dish so beloved and so rarely attempted at home.

Chef Jasper has personally visited St Joseph’s Tables in Sicily, New Orleans, New York, and Kansas City, and for this class he will prepare the same traditional dishes 🍋🐟. Along the way, he’ll share the stories, meaning, and techniques behind each recipe, bringing this cherished celebration to life.
