In 1891, Pellegrino Artusi published
La scienza in cucina e l’arte di mangiar bene, the first great Italian cookbook written for the home cook. His work helped define modern Italian home cooking by collecting regional recipes and preserving the traditions of everyday kitchens across Italy. More than a century later, his influence is still deeply felt throughout Italian cuisine, especially in the heart of Emilia-Romagna, where many of his most beloved dishes were born.
Chef Jasper recently traveled to Artusi’s hometown in Emilia Romagna and attended the historic culinary school dedicated to his legacy. This experience brings those timeless techniques and stories directly into the classroom in a way that is both authentic and engaging.
This is a multi course cooking class that includes live instruction, printed recipes, and a full lunch featuring the dishes being demonstrated. This is not a hands on class, but an immersive culinary experience designed to teach, inspire, and share the history behind each preparation.
